Beef for your freezer

Buying beef from a farm works differently than buying it at the store. Here's exactly how it goes, and what it costs.

Payment one — to us

The beef itself

We charge $4.50 per pound of hanging weight — what the animal weighs after harvest, before the butcher cuts it. We'll call you with the weight and your invoice once it's on the rail.

Payment two — to Ulen Locker

Cutting and wrapping

Ulen Locker in Ulen, MN bills you directly for cutting, wrapping and freezing — currently $1.25 a pound plus a $25 processing fee. We don't mark it up, and they don't mark up the beef.

You'll work out your cut sheet directly with Ulen Locker — which cuts you want, how thick, what size roasts, and how everything is packaged and labeled. Call them on 218-596-8841 with any questions about processing.

One more thing worth knowing up front: you won't take home the hanging weight in packaged meat. Bone, trim and moisture loss during dry aging mean the freezer weight lands somewhere between half and two-thirds of what hung.

A 200 lb quarter typically yields 100 to 125 pounds packaged. That spread is real, so the estimate below shows a range rather than one exact figure.

Every animal finishes a little differently, so the exact hanging weight isn't known until harvest day. A quarter averages about 200 lbs hanging, though every animal finishes differently. Prices shown are a guide. Confirm current pricing with us and with Ulen Locker before you order.

Packaged meat in your freezer

Steaks, roasts and ground beef — everything — works out to $9.30–11.63 a pound. Plan on about 6–7 cubic feet of freezer space.

Good to know

The questions that come up most often, mostly from people buying a beef for the first time.

How do I pick up my beef?

Ulen Locker will call you when your order is cut, wrapped and frozen, and you collect it from them in Ulen — not from the farm. Bring coolers or tote bins, and clear your freezer space before you go. A quarter fills more room than most people expect.

How much freezer space do I need?

Roughly one cubic foot for every 35 pounds of packaged meat. A quarter fits comfortably in a standard chest freezer; a half needs most of one to itself. The estimator above works it out for the size you're considering.

Can two of us split a half?

Yes — that's a quarter each. If you'd rather buy a half together and split it yourselves, tell us when you order so the paperwork and billing are set up right from the start.

I've never filled out a cut sheet. Is that a problem?

Not at all. Ulen Locker walks people through it every week, and there are no wrong answers — it's your beef, cut the way you want it. If you're unsure, say so when they call and they'll talk you through the choices.

Does the beef come frozen?

Yes. It's cut, wrapped and frozen before you collect it, so it goes straight from their freezer to yours.

What does "private treaty" mean?

It means we sell bulls directly, year round — no auction, no sale day, no bidding against anyone. You call, we talk it through, and if the bull suits you it's yours.

How do I pay?

Cash or check. Remember there are two separate bills: one to Royal Oak Farms for the animal, and one to Ulen Locker for the processing.
